These Gyuto knives are japanese chef knives with a core in "R-2" stainless steel, hardness of 63 degrees on the Rockwell scale. Not dishwasher safe.
Takeshi Saji - Takefu Knives Village
These japanese Takeshi Saji Knives Damascus steel R2 feature a stainless steel core from technology powders with a hardness of +/-63 HRC.
The octogonal handle is made from ROSEWOOD and thus contributes to traditional character of these beautiful japanese knives.
